3 Easy, Healthy and Delicious Salad Dressings For Spring!

Eating with the seasons is a fundamental part of the Plantable experience. We specifically tailor our menu to incorporate seasonal produce so that way our clients are getting the freshest ingredients AND makes for a happy planet by eating what naturally grows at each time of year. While fresh veggies alone can be delicious, a good salad dressing goes a long way to make your veggies more exciting!

Lemon Tahini Dressing 

What you need:

  • 1/2 cup tahini paste
  • 1 tsp extra virgin olive oil
  • 1/4 cup lemon juice (fresh)
  • 1/2 tsp sea salt
  • 1/4 cup cold water 
  • 1 tsp minced garlic
  • 1/2 tsp ground cumin

 What you need to do:

In a mixing bowl, add the tahini and lemon juice. Whisk until it begins to look creamy. Add a couple of tablespoons of water at a time to thin out. Add olive oil, salt, garlic and cumin. Whisk until combined. Thin out the dressing with more water for your desired consistency. Mix with any style greens and roasted broccoli, asparagus, or fresh seasonal peas!

Miso Sesame Dressing

What you need:

  • 2 tablespoons white miso paste
  • 3 tablespoons rice wine vinegar
  • 1 tablespoon sherry vinegar
  • ½ tablespoon date sugar or monkfruit sweetner (optional)
  • 1 tablespoon minced ginger
  • 1 clove garlic, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon reduced sodium tamari

What you need to do:

Whisk everything together. Drizzle over fresh greens, shredded carrots & cabbage, avocado, and baked or pan fried tofu chunks. Top with sesame seeds and enjoy!

 

Cashew Ranch Dressing

What you need:

  • 1/2 cup raw cashews, soaked overnight 
  • 1/4 cup water
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 tsp white vinegar
  • 1/2 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1 small garlic clove
  • 1/2 tablespoon vegan Worcestershire sauce 
  • 2 teaspoons capers
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1/2 tbsp fresh chives, chopped
  • 1/2 teaspoon fine grain sea salt and pepper

 What you need to do:

Soak the cashews overnight. Drain and rinse them off. In a high powered mixer or ninja bullet, blend all ingredients together except the fresh herbs. If the dressing is too thick, thin with some water to desired consistency. Remove from the blender and put into a mixing bowl. Add the chopped herbs and whisk together.
